I run Raspbian without a GUI. Just don't do startx ! Also, there are some uninstall scripts discussed on RasPi forums that will happily strip-down Raspbian image to remove unnecessary packages. My inclination towards Raspbian is because it is treated as the official distribution and gets regular development. I have nothing against PiBang.
