I run Raspbian without a GUI. Just don't do startx ! Also, there are some uninstall scripts discussed on RasPi forums that will happily strip-down Raspbian image to remove unnecessary packages.

My inclination towards Raspbian is because it is treated as the official distribution and gets regular development. I have nothing against PiBang. In fact, Crunchbang is my favourite and current distro for my linux desktop and notebooks (it has been that way for 3yrs :) )
