You might want to see what HOMER offers, it does all sorts of fancy things
for you:

Afaik, there's no way to have FS save the SIP signaling with the CDRs.
I've used pcapsipdump<http://wiki.freeswitch.org/wiki/Packet_Capture#pcapsipdump>

which saves to separate files -- but that captures the RTP also, and then
is in standard PCAP format. Perhaps you can turn the verbosity down or get
that style from different software.
