Fabian,

I would really recommend staying away from H323 on FS.
As far as I know, both modules are far from perfect, and you would have to be closely in touch with the devs to get them working as you need.
I know people who went for Yate, just to convert H323 into SIP, and then FS.

About the virtual interfaces, FS does not have to deal with that.
It's the network layer of the Linux kernel which decides which interface to use.
