fax2email is quiet easy you just need to keep a mapping of did's with
respective email addresses of persons in a database or something, and
an api call on hangup can trigger an mail script to convert and send
fax in a more user friendly format like pfd or doc etc.

for email2fax you would need to setup an smtp service fax.example.com,
your smtp service can pipe the email to a custom script to
extract file attachments using a mime decoder and send them to
freeswitch. for all document format conversion things you can use
openoffice macros functionality which is callable from command line.
