Hi Jeremy,

You may get better results with a SIP trace from the network - either tcpdump/wireshark/ngrep.
Could be SIP session timers as a Sunday afternoon guess.

With ngrep, the command for port 5060 is:
ngrep -W byline port 5060

Compare the difference between your working phones and your siemens ones.  There is probably a setting on the siemens for responding to critical packets or something of that ilk.
