Have you looked at

https://freeswitch.org/confluence/plugins/servlet/mobile?contentId=16352708#content/view/16352708 with it you can continue executing instructions after a hang up. Though I’m not sure whether you can set channel variables. Check it out.

Nowadays I just make any addition or changes while posting the mod_xml_cdr to a web server. You’d get the xml cdr and act accordingly.
