When you're invoking Lua via FreeSWITCH, there's nowhere to 'print' other than to the console -- so, yes, consoleLog() is the easy way to go.
You could also log to a file if you preferred, Lua documentation can help you there.

use freeswitch.consoleLog method, e.g.
freeswitch.consoleLog("ERR","Result of system call: " .. res .. "\n");
