Yes, you were correct, it was pcapsipdump filling the disk.  Clearly when I was debugging something I unknowingly started pcapsipdump to log every session - forever.  Once the pcap files were removed, and pcapsipdump stopped, the space is again at 5% used and 95% free. 

If anyone has a source for a contract Unix administrator, we would love to hear about them.

You are probably losing disk space for some other reason fs probably has nothing to do with the problem.  You have everything under the root partition which is a bad idea indeed.
