for starters, you need to read the book:

the first few chapters will give you a good understanding how the
system works and what you can do with it.

Then, you can take my minimalistic config, in order to get rid of all
the demo features in standard configuration:

Then, see here a draft config which attaches two SIP profiles,
"inside" and "outside" to two interfaces and processes unauthenticated
calls:

The idea is, that you don't have to stick to the standard
configuration and internal/external SIP profiles, and you can build
the configuration to serve your exact need.
