For what it's worth, here's some history on it (MOS):
MOS stands for "Mean Opinion Score" and is a concept that's a holdover from
good old fashioned analog telephony; 5 is "excellent", 1 is "poor".
Virtually every aspect of a telephone network - right down to the
microphone and speaker in an analog telephone set - were engineered for
optimal voice quality.
Voice quality wasn't accurately measurable instrumentally or
algorithmically; it's a subjective thing that can vary from listener to
listener. So, the test was performed in a manner such as the following:
actual people read standardized passages to other actual people on the
other end of a phone line, who then rated what they perceived to be the
quality of what they heard. The MOS was the calculated arithmetic mean of
the values reported by the listeners.
MOS is still used today albeit in a slightly different way; for example,
you could compare the effect of different CODECS on both MOS and on
bandwidth.
