Jorge, In freeswitch you can set the resolution of a conference with
different profiles in conference , 8k,16k,32k etc.. I have noticed the
delay increases as you increase rate which makes sense as more data is
sampled.

Play around with the burst size and queue size
here is my xml config
around 3-4 second delay from 16k freeswitch conference.
To small a buffer and the players disconnect
Im also running icecast on
same server.

<queue-size>524288</queue-size>
<client-timeout>30</client-timeout>
<header-timeout>15</header-timeout>
<source-timeout>10</source-timeout>

You have to keep in mind that icecast itself has a fair bit of buffering
involved with it and theres not a lot you can do about that
