You need to do it in the dialplan then I guess. Just set the bypass_media=true channel variable when you want bypass media.

Is there a way of having just calls using g711 do media passthrough and NOT all calls
Because the following parameters in internal.xml apply to all calls

<param name="inbound-bypass-media" value="true"/>
<param name="inbound-proxy-media" value="true"/>
