Hi Fraser,

Personally I use voipmonitor.  It will monitor your server looking at the raw packets to the server.  All data like jitter etc is stored in a mysql database.  It also outputs the rrd call information to a directory so that you can graph latency etc.

If you don't want to write something there is already a monitoring gui, but you will have to pay for it - http://www.voipmonitor.org/
