into the server?"

To do this you need an FXO. Most FXO's are cards you
can get there are several companies that make them. I
recommend Sangoma. Linksys has an external FXO not
likely as good of sound quality as the Sangoma.
However, Later this week I'm going to test a Linksys
spa3102 with Freeswitch to see how it works.

"Is it also possible to use ordinary phones across LAN
instead of SIP phones"

Yes you can use ordinary phones if you use an adapter
FXS (s for station). A common FXS is the Linksys PAP2T
which will convert SIP to an standard line that any
standard phone can use.
