We are in the process of publishing some performance numbers for a stock freeswitch build but in addition to the other guidelines you have received I would add this.
With a 64bit box w/ CENT/OS 5 and 4 GB mem you should be able to handle well over 1000 simultaneous calls to a diverse set of audio prompts. If you move your stock prompts to ram disk you should be able to handle 2000 simultaneous calls. Now depending upon what the rest of the IVR application does you may need cpu/ram/bandwidth/disk reserved for it.
The best I can tell you is set up a test bench and try it... thats what we did...

Mike,
They have not given me any numbers to target. I have narrowed down the contenders and then I will spec a system designed around the selected implementation. The main issue is that they do not want to spend a lot of money on a development project and then discover it will not scale. I do not think there is a problem here but since I have not launched anything I want to be able to back up any recommendation I make with some type of data.

Is there any additional data available on load capacity for Freeswitch. I
am assisting in the development of an IVR platform for a CLEC. They have
not decided on a platform and I have suggested Freeswitch. They want me to
evaluate and compare with some other options. I do not have commercial
launch experience with Freeswitch and I would like to stay with an open
source platform. I have launched services on Asterisk and have already
recommended against using that as their platform. I do have the information
from the FAQ, but it would be helpful to have additional data on load and
scalability. Any help would be appreciated.
