[Freeswitch-docs] Channel variables page

I'm fine with this.  Certainly any that are specifc to individual modules
make more sense on those module pages.  Need to be a bit careful with the
ton of rtp and media variables that we don't try to stick those just in
sofia.  It might make sense to reference those on the Sofia page with links
to their home.
